Healthy Picks: Pizza and Cheese Pie with Cherries

This May, we double down on our Healthy Choice to add flavour and balance to your meals. We have two delicious proposals: homemade pizzas with three different toppings and a sublime Cheese Pie with Cherries.

Our pizzas, whose base is made with cauliflower and whole wheat flour, are a nutritious and delicious alternative to the traditional recipe. Try the vegetarian version, stuffed with fresh vegetables and mozzarella cheese, the delicious cheese pizza with a special touch of truffle cream, or our Transmontana pizza, which combines the authentic ham flavour with the texture of fresh mushrooms. All of them promise a tasty and healthy culinary experience.

For a sweeter touch, we suggest our Cheese Tart with Cherries. This dessert combines cream cheese, mascarpone, quark, cream and Greek yoghurt, balanced with the sweetness of fresh cherries and a touch of honey.

Pizza dough

Base

  • 4 cups shredded cauliflower
  • 1 tablespoon extra virgin olive oil
  • 1 cup ground almonds
  • 1 cup whole wheat flour
  • 1 tablespoon dry biological yeast
  • 1 egg
  • 100 ml water

Filling

Vegetarian pizza

  • 3 tablespoons tomato sauce
  • 3 tablespoons confit onion
  • Slices of eggplant
  • Thinly sliced peppers
  • Cherry tomatoes
  • 1 cup grated mozzarella cheese
  • Grated pepper mixture to taste
  • Herbs to taste

Cheese Pizza

  • 3 tablespoons of tomato sauce
  • ½ cup island cheese
  • ½ cup mozzarella cheese
  • Slices of goat cheese (chèvre type)
  • Pine nuts to taste
  • Truffle cream (put after baking)

Transmontana Pizza

  • 3 tablespoons of tomato sauce
  • 1 cup of ripened goat cheese/ hazelnut
  • Freshly sliced mushroom mix
  • Slices of ham
  • Grated pepper mixture to taste
  • Herbs to taste

Method of preparation:

Place a pot over the heat with the olive oil and the shredded cauliflower, stirring occasionally and letting the cauliflower "sweat" to release as much water as possible. Then wrap the cooked cauliflower in a linen cloth and squeeze to remove excess water.

In a bowl, mix the cauliflower with the almond flour, whole wheat flour, egg, water and natural yeast until it forms a dough. If necessary, add more water or flour. Let it rest for approximately 2 hours.

Line the pizza tray with baking paper, and spread the dough into the desired shape with the help of a rolling pin. Add the ingredients and bake in an oven at 180°C for about 10 minutes.

Serve the pizza with a salad of green leaves, fresh mozzarella and apple.

Cheese pie with cherries

  • 300 g cream cheese
  • 300 g mascarpone cheese
  • 300 g quark cheese
  • 200 g cream
  • 300 g Greek yoghurt
  • 200g sugar
  • 5 eggs
  • 50 g flour
  • 1 vanilla pod

Topping

  • 1 kg cherries
  • 1 tablespoon honey

Method of preparation:

Preheat the oven to 200ºC. Grease a 25 cm loaf pan with butter and line it with baking paper.
Add the cheeses and the sugar in a bowl, beating with a mixer until the sugar dissolves. Add the eggs, one at a time, until you get a homogeneous mixture.

Then add the sifted flour, a pinch of salt, and the seeds of the vanilla pod and beat again. Pour the mixture into the pan and bake for 45 minutes, allowing the top to darken without burning. Let cool to room temperature and then refrigerate.

While the pie is baking, prepare the cherry topping. Wash the cherries very well, remove the stones and cut them in half. Put a pan on the heat, and cook the cherries with the honey until you get a semi-jam. Let it cool.

Before serving, cover the cheese pie with cherry compote.
